福清 , 福州 唯一代管县级市,距主城区南仅三十来公里。 福清 是 福建 有名的民富城市之一,已连续多年在百强县榜单上排名靠前,县域经济在 福建 省内仅次于 泉州 晋江 。

三四十公里的距离,放在地势平坦的地区,其实很难产生巨大的改变,但在 福建 ,已足以让 福清 与 福州 市区在许多方面区隔开来,饮食自然也是其中之一。 福清 有其自成一体的一系列地方小吃,且具有相当的丰富度,这也是为何我要为其单独安排一日。

福清 光饼是 福建 光饼中又一有着相当影响力的流派,与 福安 光饼光溜溜的外在不同, 福清 光饼更像是北方的芝麻烧饼,一面布满了芝麻,质地偏硬、耐嚼度足,中空的特点也让其拥有了制作烧饼夹(肉)的先天优势。不过,比起普通光饼或光饼夹,以其为基础发展出的紫菜饼,才是我的目标。

紫菜饼即是带紫菜肉馅的光饼,饼壳保留了 福清 光饼独特的硬韧口感,软润的紫菜肉馅调和了光饼本身过硬的吃感,达到一种刚刚好爽口而不过的程度,再加上紫菜那鲜美的滋味、弹脆的口感,实在是妙。

海蛎饼是 福州 莆田 一带常见的油炸小吃,在 福州 市区也较为流行,不过要论地道与实诚,还得将舌尖伸向 福清 。

简单地理解,海蛎饼就是加海蛎、猪肉、包菜馅的油炸饼,大米与黄豆混合磨浆以及油炸方式等都与一般油炸饼无异。咬开一口,满满的内陷立刻露出,虽然包菜与肉是大头,几颗海蛎终不会缺席,丰富的口感、油润与咸香定能让你大口狂吃。若是愿意多添一块钱,还能买到加一个蛏子的升级版海蛎饼,那自然更爽一番。

番薯丸

番薯丸是起源于 福清 沿海一带的一种特色小吃,皮的制作与薯粉丸类似,但并非淀粉加芋头而是淀粉加红薯,因而煮熟后会呈现出红薯般的黄色,口感上依旧软糯绵韧,多了分红薯的甘甜。番薯丸所包的内馅则是典型的 福清 滋味——紫菜肉馅,与紫菜饼如出一辙,调味上同样是鲜甜口。

番薯丸可直接煮制后食用,也偶见油炸番薯丸,最常见的做法是与花蛤、青菜和 兴化 粉同煮成一碗标准版的番薯丸,作为一顿正餐已完全足够。

福清 特色小吃中,还有一类十分经典的米粉——滑粉。滑粉之滑与粉无关,而是要将与粉同煮的食材先裹粉码味腌制,煮熟后便有了一层半透明的酱色外衣,吃在口中刺溜得滑。理论上,只要是 福清 当地常见的食材都可以拿来“滑”一下,不过最普遍的仍要属牛肉滑、瘦肉滑、蛏滑(如图)、海蛎滑及各类海鲜滑。

除了“滑”的这一步骤, 福清 滑粉本质上就是一碗煮粉,除了基本的盐、姜、胡椒等调料外,不可缺少的一味是 福清 当地产的酸笋,既增酸香,本身又带着爽脆,在上面的番薯丸中同样有这一食材的加入。

扁食并不是 福清 普遍意义上的地方小吃,但是有这么一家店制作的扁食一向被 福清 人视作来此不可错过的特色,当一探究竟。

单看一碗扁食的外形其实传达不了太多信息。果断先试一勺汤,咸鲜之上带些酸香,中规中矩。尝一颗扁食,竟不由地双眼睁大,嘴巴微张——这肉馅并非捶打过的肉只是剁肉,口感不过尚可,那咸中带甜的调味才是令我惊喜之处,毫不冲突、毫不违和,再与这汤汁一起更是恰到好处,以至于我最后得出的结论是:这碗扁食在我进 福建 后吃过的所有扁肉扁食中能排前三。

杂烩汤, 福清 家家户户都会制作、任何一家小炒店都能提供的汤菜。杂烩二字从来都意味着用料多样、做法不拘一格, 福清 杂烩汤也不例外。猪皮、猪心、猪肚、鱿鱼干等算是杂烩汤必备的食材,至于在此之上的各类蔬菜,就不再有定数,各有所选。

闽东沿海一带对酸辣味型的汤有着相当统一的追求,杂烩汤便可当作 福清 版本的酸辣汤,咸香酸辣的滋味让人无比舒畅。同时,这样一份食材满满的汤,只需再加一碗米饭,就完全撑得起一顿正餐的需求。

更多 福清 小吃,基本还是煮白果、炒米粉之类的主食型小吃,他们也大多与海鲜一同制作。本想再试一碗海鲜焖面,终究是没来得及消化已下肚的其他食物,只能留个念想了。
