class="">上世纪70年代前,农村老百姓做饭时,必须在厨房中的灶台里进行。灶台的结构因家庭人口而决定,人口少的就砌就一个锅位,放置中等砂锅一个。人口多的,一般要在砌就的灶台中,放置一个大锅,一个小锅。为了节省柴草,往往会在灶台中“因地制宜”另外再设置一个小孔,安置一个小缸,利用余热将缸中水温提升,便于洗漱之需。村民们美其名为:“公牵孙”。</p><p class=""> </p><p style="font-weight: 400;">做饭时,村民们要往灶膛中添续柴草,最终将锅内食物煮熟。由于柴草燃烧时会生成浓烟,浓烟将锅底熏久后又会生成一种“灰垢”,直接阻碍柴草导热而影响热能的利用。“扒鼎”工序,就是将砂锅取出进行剔除“灰垢”的过程。</p><p style="font-weight: 400;"> </p><p style="font-weight: 400;">“扒鼎”时间,一般在早晨进行。村民将砂锅倒扣在地面,然后用锄头将灰垢剔除。剔除的灰垢,会在地面上留下一个黑圈,过去农村医学知识匮乏,传说踩过这个黑圈的人会得一种“背蛇”(带状疱疹)的病。因此,有责任心的村民都会在“扒鼎”后,用竹扫帚将黑圈扫掉,以免过路村民误踩到。有的人家,就会在房前屋后的龙眼树下,或者边角地方进行扒鼎工序。</p><p style="font-weight: 400;"> </p><p style="font-weight: 400;">当时,农村有句俗话叫“三天一过扒,谷好(胜似)去讨柴。”不管用福清话,还是莆仙话,读起来都朗朗上口押韵,这就是村民们为什么要不时“扒鼎”的真实写照。</p><p style="font-weight: 400;"> </p><p style="font-weight: 400;">历史的车轮行进到上世纪80年代,村民们就开始逐渐使用煤球煮饭了。今年90多岁的岭边村村民赵女士告诉记者,在农村,房前屋后可以讨柴,柴草来源充裕。而煤球,在当时还要花费一笔资金去购买。因此,那时一般村民都是“配置”两种做饭器具,灶台的利用率还是蛮高的, “扒鼎”也会不时在坊间出现。到了上世纪90年代,液化气罐出现了,村民们随即添置这种既清洁又省时省工的现代化炊具。灶台的利用率更低,除了年节时分蒸年糕、油炸豆腐等炊事用途外,一般极少会去动用。“扒鼎”景观,逐渐淡出村民的视野。到了新世纪,电饭煲、电磁炉又陆续“粉墨登场”,新能源电器一件件地“层出不穷”,那个老百姓沿袭数千年的灶台,更是慢慢地成为农家一道摆设的“风景线”。</p><p
